Lamb Souvlaki
250g Lamb cubed
½ Tomato (sliced)
2 Tb Lemon Juice
½ Lebanese cucumber (sliced)
2 Tb Olive oil
2-3 Lettuce leaves (shredded)
1 Tb Fresh Oregano
2 Pita Breads
1 clove Garlic
Method:
1. Marinate meat in Olive oil, lemon juice, garlic and herbs, for as long as possible (preferably overnight)
2. Thread meat onto 2 skewers and grill on a high heat until golden and cooked through.
3. Spray each pita with oil and fry for about 1 minute each side in a frypan.
4. Serve each pita with some salad, Tzatziki and half of the meat.
