Hummus
1 tsp Olive oil
2 Tbs Tahini
1 clove Garlic (Crushed)
1/3 cup Buttermilk
½ Small onion (diced)
½ tsp Paprika
½ tsp Ground cumin
1 small can Chickpeas (drained and rinsed)
1 Lemon (juiced)
2 Tbs Olive oil
½ Tbs Corriander (Chopped)
Method:
1. Fry onion in 1 tsp of olive oil, when it becomes soft add the garlic and cumin and fry for a further 2 minutes. 2. Combine all remaining ingredients with the onion and garlic except oil and coriander, and blend to a smooth paste.
3. Serve garnished with remaining olive oil and chopped coriander.
