Fish grilled in Banana or Cabbage Leaves
250g White ocean fish
1 stem Lemon Grass (chopped)
2 cloves Garlic
1 tsp Sesame Oil
1 Tbs Vegetable Oil
1 ½ Tbs Oyster Sauce
1 tsp Turmeric
½ tsp Sugar
2 Spring Onions
2 Cabbage or Banana Leaves
½ cup Rice
¼ Onion (sliced)
Oil for deep frying
Method:
1. Preheat oven to 200C.
2. Deep fry sliced onions, drain on paper towel and set aside to cool.
3. Blend lemon grass, vegetable oil and garlic.
4. Add remaining ingredients to blended mixture, except for fish, fried onion and rice.
5. Put water on to boil, add rice once water is boiling. Remove when rice is soft about 10 minutes.
6. Marinate fish by spreading mixture over the fish.
7. Sprinkle half of the fried onion on top.
8. Wrap each piece of fish in a cabbage or banana leaf, and place in oven at 200C for 8 min.
9. Remove from oven and serve with rice, garnished with remaining fried onion.
